Cake Classes

Want to learn how to cover a special cake in smooth fondant icing and pipe perfect swirl of buttercream?

I provide cake classes in small groups and 1:1 tuition from my studio in Lasswade. I can also provide bespoke demonstrations and workshops at your venue by appointment for private events and corporate groups.

I have many years experience teaching cake decoration and sugarcraft and I am also a member and trainee demonstrator with the British Sugarcraft Guild.

What classes do I offer?

I offer fun basic skills classes for novices and beginners and cake project workshops to practise specific skills and techniques for more experienced cake decorators.

Class Title: Simple Fondant Celebration Cake

When: 29/01/20 (6-9pm)

Where: Heavenly Tiers Cake Studio

Level: Novice / Beginner

Cost: £75.00

Course Description:

Learn how to prepare, fill and cover a 8″ round cake and decorate with crimpers and simple cutters. This course is great all rounder for getting started in cake decoration.

Class Title: Royal Iced Cookies – Flowers & Hearts  (box of 12)

When: 19/02/20 (6-9pm)

Course Description: 

Learn the basics of Royal Icing to decorate a box of 12 heart and flower shaped cookies in pretty designs. This course is great for getting to grips Royal Icing consistency for piping outlines and flood filling.

Class Title: Buttercream Terrarium Cake (Piped buttercream succulents)

When: 26/02/20 (6-9pm)

Level: Fun / Novice / Beginner

Course Description:

Cover a 6″ round cake in buttercream, them pipe a variety of succulents in buttercream using a variety of nozzles.

This class is great for getting to grips with covering a cake in buttercream to a smooth finish. Creating different coloured icings and learning different piping effects.

Class Title: Novelty Jewellery Box Cake 

When: 04/03/20 (6-9pm)

Level: Post Beginner / Intermediate

Cost: £75.00

Course Description:

Create a jewellery box cake from a 4″x 8″ cake. Covering the cake with textured fondant and decorations made using moulds, cutters and texture mats. The cake will be finished using lustre dusts and hand painted details.

This is a great course to take your cakes to the next level. You must have some cake decoration experience to complete this course, as it is fast paced to cover and decorate in three hours.

Class Title: Floral 7 Cupcake Bouquet – (Buttercream and fondant tops)

Create a beautiful spring floral 7-cupcake bouquet. Decorated with delicate buttercream swirls and fondant tops, finished with fondant cherry and hydrangea blossoms.

A basic introductory modelling class to create 6 Easter themed designs, which can be used as cupcake toppers.

Class Title: Two Tier Stacked  – Elegant Old English Rose and Lace Cake

When: 25/01/20 Full day 9.30am – 4.30pm

Level: Intermediate 

Cost: £175

Course Description:

Learn to create a stunning stacked celebration cake using a 4″ round dummy tier and 7″ real sponge cake, finished with a statement old English rose and edible lace detail. Finished with piped royal icing boarder and ribbon.

This course is perfect for those who want to build confidence to dowel and stack a celebration cake.

This is a fast paced course and experience with cake decoration and sugarcraft is required.

Class Title: Mini Cakes & models – Adult and Child (10-14yrs)

When: 08/02/20 (10am – 1pm)

Where: Heavenly Tiers Cake Studio

Level: Fun / Novice / Beginners

Cost: £70 per pair

Course Description:

This class is designed for one adult and child (10-14yrs). Due to the space in the studio, we can accommodate two pairs per class.

Each participant will have a 4″ round sponge cake to spilt, fill and cover with fondant on a 6″ board. Then learn to create a simple fun model (teddy / kitten / dog / fairy) to sit on the top.

Class Title: 3D Watering Can Cake

Course Description:

Learn to create a watering can illusion cake using a mixture of cake, rice krispie treat and modelling paste. (Further details to be confirmed)

This is a fast paced course and participants will need experience in cake decoration and sugarcraft.

Simple Celebration Cake Class

Very relaxed and enjoyable way to spend an evening with new skills being learnt. Smaller group so a much more hands on with the instructor Jo. A very enjoyable experience and learnt that there is a lot more to cake decorating than you think!

Newbattle High School, Midlothian.

Jo came into the school to work with a group of marginalise/hard to reach S3 pupils who were timetabled participants in the Bronze Duke of Edinburgh Award scheme.  We did six consecutive weeks for cake craft with a variety of skills developed and applied to several cake projects such as piping and icing.  Jo is extremely patient she explains and demonstrates tasks and procedures very well and is extremely supportive with the students, some of whom have confidence and behavioural issues.  The practical outcomes of the classes were great and the group were impressed with what they could achieve along with the school staff.  Some of whom showed a flair for this activity and wished to continue with it.  I’m looking to bring Jo in again with other similar groups in neighbouring schools.

FOTA Schools Delivery Officer

Jo designed a bespoke course for our S4 group to do for the Skills section of their Duke of Edinburgh award. The cake course was a great introduction to a variety of beautiful and accessible cake decorating techniques. Jo is a friendly, calm, and really knows her stuff. The pupils all responded so well to her teaching style. The projects and techniques were taught so that beginners could learn quickly and feel able to implement their new skills at home. Pupils got to try out a host of special tools and materials that Jo provided, make popular designs such as a unicorn cake and sculpted animals, and also got to flex their creativity and experiment with their own ideas. Some pupils who have anxiety at school were absorbed in the activities and said working on cakes took their minds off their worries. One was even inspired to apply to college for a baking and cake decorating programme which she will be attending next year. Thanks Jo for such a fun and creative class!

FOTA Schools Delivery Officer

Jo led four sessions with our Home Economics department and covered a variety of skills with us to help us prepare for a Practical Cake Craft course for next session. We covered cake boards, embossing, crimping, modelling and piping. We used these skills on more than one occasion and made a Ted in a Bed cake.

We would highly recommend Jo as a tutor and even hope to have her return to the department to work with some of our young people. She has an excellent skill base, providing lots of hints and tips on finishing skills, recognising our skills and where we could improve/ practice our skills for the following week. Thank you!
