Cake Classes

Our Cake Designer and tutor, Joanna can teach you how to make your own fabulous creations with classes and demonstrations covering cake decoration basics to more intricate projects and skills.

Below is our latest cake decoration class programme based at our Cake Studio from September – December 2019.

We are offering a broad range of classes at all levels on Wednesday evenings and Saturdays during the day. Classes will be limited to small groups so Joanna can focus attention on each participant.

Wired Rose Spray


Class: 2 Week – Wired Sugar Rose Spray

When: Wednesday: 13/11/19  & 20/11/19 (6.00pm – 9.00pm)

Course Description:

Learn to make a wired sugar rose spray with filler flowers and foliage from flower paste.

Week 1: Make flowers and foliage

Nordic Ski Model

Course Description:

Make a Nordic Ski figure topper using modelling paste. Decorate a 4” square board in a winter theme.

3D Old Boot Planter

Saturday 30/11/19 (9.30am – 4.30pm)

Course Description:

Using an 8” square cake, carve an old boot planter. Use an airbrush to add colour and tone.  Decorate board and fill boot with chocolate soil and simple fondant flowers.

Simple Celebration Cake Class

Very relaxed and enjoyable way to spend an evening with new skills being learnt. Smaller group so a much more hands on with the instructor Jo. A very enjoyable experience and learnt that there is a lot more to cake decorating than you think!


Newbattle High School, Midlothian.

Jo came into the school to work with a group of marginalise/hard to reach S3 pupils who were timetabled participants in the Bronze Duke of Edinburgh Award scheme.  We did six consecutive weeks for cake craft with a variety of skills developed and applied to several cake projects such as piping and icing.  Jo is extremely patient she explains and demonstrates tasks and procedures very well and is extremely supportive with the students, some of whom have confidence and behavioural issues.  The practical outcomes of the classes were great and the group were impressed with what they could achieve along with the school staff.  Some of whom showed a flair for this activity and wished to continue with it.  I’m looking to bring Jo in again with other similar groups in neighbouring schools.

FOTA Schools Delivery Officer

Jo designed a bespoke course for our S4 group to do for the Skills section of their Duke of Edinburgh award. The cake course was a great introduction to a variety of beautiful and accessible cake decorating techniques. Jo is a friendly, calm, and really knows her stuff. The pupils all responded so well to her teaching style. The projects and techniques were taught so that beginners could learn quickly and feel able to implement their new skills at home. Pupils got to try out a host of special tools and materials that Jo provided, make popular designs such as a unicorn cake and sculpted animals, and also got to flex their creativity and experiment with their own ideas. Some pupils who have anxiety at school were absorbed in the activities and said working on cakes took their minds off their worries. One was even inspired to apply to college for a baking and cake decorating programme which she will be attending next year. Thanks Jo for such a fun and creative class!

FOTA Schools Delivery Officer

Jo led four sessions with our Home Economics department and covered a variety of skills with us to help us prepare for a Practical Cake Craft course for next session. We covered cake boards, embossing, crimping, modelling and piping. We used these skills on more than one occasion and made a Ted in a Bed cake.

We would highly recommend Jo as a tutor and even hope to have her return to the department to work with some of our young people. She has an excellent skill base, providing lots of hints and tips on finishing skills, recognising our skills and where we could improve/ practice our skills for the following week. Thank you!
