Intermediate Cake Decoration (Level 3)
30th April – 25th June 2019 (8 weeks) excluding (28/05/19) on Tuesdays 7.00pm – 9.00pm at Beeslack High School, Penicuik.
This class is suitable for students with experience of cake decoration, who are able to cover cakes with fondant and buttercream. Make simple models and flowers. We will build on techniques to produce more intricately decorated cakes.

Jo came into the school to work with a group of marginalise/hard to reach S3 pupils who were timetabled participants in the Bronze Duke of Edinburgh Award scheme. We did six consecutive weeks for cake craft with a variety of skills developed and applied to several cake projects such as piping and icing. Jo is extremely patient she explains and demonstrates tasks and procedures very well and is extremely supportive with the students, some of whom have confidence and behavioural issues. The practical outcomes of the classes were great and the group were impressed with what they could achieve along with the school staff. Some of whom showed a flair for this activity and wished to continue with it. I’m looking to bring Jo in again with other similar groups in neighbouring schools.

Jo designed a bespoke course for our S4 group to do for the Skills section of their Duke of Edinburgh award. The cake course was a great introduction to a variety of beautiful and accessible cake decorating techniques. Jo is a friendly, calm, and really knows her stuff. The pupils all responded so well to her teaching style. The projects and techniques were taught so that beginners could learn quickly and feel able to implement their new skills at home. Pupils got to try out a host of special tools and materials that Jo provided, make popular designs such as a unicorn cake and sculpted animals, and also got to flex their creativity and experiment with their own ideas. Some pupils who have anxiety at school were absorbed in the activities and said working on cakes took their minds off their worries. One was even inspired to apply to college for a baking and cake decorating programme which she will be attending next year. Thanks Jo for such a fun and creative class!

FOTA Schools Delivery Officer
Jo led four sessions with our Home Economics department and covered a variety of skills with us to help us prepare for a Practical Cake Craft course for next session. We covered cake boards, embossing, crimping, modelling and piping. We used these skills on more than one occasion and made a Ted in a Bed cake.
We would highly recommend Jo as a tutor and even hope to have her return to the department to work with some of our young people. She has an excellent skill base, providing lots of hints and tips on finishing skills, recognising our skills and where we could improve/ practice our skills for the following week. Thank you!
